Taste umami in a broth made from a natural "dashi" packet. Enjoy fresh classic Japanese noodles - "udon" - using 100% Aichi prefecture grown wheat producing a bright silky color and a chewy texture.
Ingredients
For the Udon: 6.3 oz or approx. ½ of package
For the Broth: 1 dashi packet 1 tablespoon mirin 1 tsp sugar 1 ½ tablespoon of soy sauce Pinch of salt
Directions
Noodles In a pot of rapidly boiling water, cook noodles for 8 mins Drain, rinse noodles under cold water to remove excess starch In the same pot, boil fresh water to warm the cooked noodles; set aside to be served with the broth.
Broth In a saucepan, bring 2½ cups of water to boil, adding 1 dashi pack. Remove dashi pack and add all remaining ingredients. Reduce heat to simmer. Strain noodles with set-aside water. In each bowl, pour 1 ¼ cups of broth over the noodles. You may add mushrooms, a soft boiled egg, and other toppings of your choice.
