Description

The MISE 店 Soba Celebration Kit has everything you need to prepare a comforting bowl of soba, whether warm or chilled. It includes “half raw” buckwheat noodles from Izumo, all-natural dashi sachets, and a recipe card for a rich broth. The kit also features two ceramic soba choko cups for dipping sauce and a Tsuboe Irogami grater for fresh wasabi or ginger garnish. With the option to wrap it in a reusable furoshiki, this kit makes a thoughtful gift, especially for New Year's Eve, the Japanese tradition to have "toshikoshi soba"  which symbolizes longevity and a fresh start.

  • Soba Noodles - A package of “half-raw” soba noodles, sourced from Izumo region in Shimane Prefecture, Japan, is made from a blend of half buckwheat flour and half wheat flour, known as gowari soba. The half-raw nature of these noodles preserves their fragrance and flavor, while also allowing for quicker cooking compared to fully dried noodles.
  • Bonito and Kombu kelp Dashi Packs - Sachets sourced from Tsubamesanjo, Japan to easily prepare an umami-rich broth from scratch. This all-natural dashi broth is made by combining bonito flakes that have been smoked to maximize their aroma with flavorful Rishiri kelp
  • Tsuboe Irogami Grater - made in Tsubamesanjo, the metalworks capital of Japan, this grater is shaped like turning a sheet of paper inspired by the art of origami, and fits comfortably in the palm of a hand and over the tip of the finger for ease in grating. It's ideal for grating everything from wasabi and ginger to accompany a bowl of soba.
  • Ochoko (2x) -  Two soba cups made in Gifu, Japan to hold the dipping sauce. Each cup’s design reflects the traditional shoji screens (sliding paper screens) that have been passed down through generations in Gifu that have now been transformed into tableware. Each cup features a special luster that sparkles seven colors, depending on the angle of light.
  • Recipe Card - A step-by-step recipe card and guide to preparing the perfect bowl of soba by JACCC Culinary Ambassador and third generation Japanese American home chef Jane Matsumoto
  • Furoshiki ($18) - a traditional, versatile, and reusable Japanese wrapping cloth. The actual furoshiki used for wrapping may differ from the image.

The soba and grater included in the kit may vary slightly from the one shown in the image.
